Veggie Fried Rice

Fried rice is one of my favourite Asian dishes, and it’s so much fun to make. I find it does take time though, and I turn my kitchen upside down when I make it, but in the end it’s worth it.


This rice dish is made with scallions, mushrooms, and peppers and the two ingredient sauce is a mix of soy sauce and hoisin sauce. Enjoy!



Ingredients

1 cup uncooked rice

Salted butter

1 large egg

Salt and black pepper to taste

1 tbsp salted butter

1 (227 g) container cremini mushrooms -sliced

1 cup sliced mini sweet peppers

Salt and black pepper to taste

2 tbsp soy sauce

2 tsp hoisin sauce

1/2 tbsp vegetable oil or canola oil

1 large garlic clove -finely grated

4 scallions (white and light-green part) -sliced



Directions

- Cook the rice as per the directions.

- As the rice cooks, make the egg.

- Put some butter in a pan and heat on medium.

- Beat the egg with some salt and black pepper and pour into the pan when the butter is melted.

- Let the egg cook. Don’t scramble.

- When the egg is cooked, flip it, and cut it into pieces using a spatula. Remove from heat.

- Put 1 tbsp of butter in a pan and heat on medium.

- When the butter is melted, add the mushrooms, and mix well.

- Mix often so the mushrooms don’t burn.

- When the liquid from the mushrooms begin to release, add in the peppers, salt, and black pepper. Mix well.

- Reduce the heat a little if needed and cook until all the liquid is cooked away.

- As the veggies cook, mix together the soy sauce and hoisin sauce. Set aside.

- When the rice is cooked, fluff with a fork.

- Pour the vegetables oil or canola oil in a pan and heat on medium-low.

- When the oil is heated, add the garlic, and cook for a minute or two.

- Add in the scallions and cook for a few minutes.

- Add in the rice and mix well. Increase the heat to medium.

- Add in the sauce and mix well.

- Cook the rice for about 5 minutes then add in the veggies. - Cook for a few more minutes then add in the egg.

- Mix well and cook for a few more minutes.
