Triple Chocolate Cookies

The little gems taste just like brownies and they’re one of my favourite cookies to make during the holiday season.


Add these chocolate cookies to your holiday baking, and whether they’re apart of the dessert table or given in a gift box, they will be enjoyed by all.



Ingredients make 24 cookies

1/2 cup unsalted butter -soft

1/2 cup sugar

1 large egg

1 tsp vanilla

1 cup flour

1/4 cup cocoa powder

2 tsp baking powder

1/3 cup mini chocolate chips

1 tbsp milk

1 tbsp cocoa powder

5-6 tbsp icing sugar



Directions

- Cream together the butter and the sugar using an electric mixer on medium-low speed.

- Mix in the egg and the vanilla on medium-low.

- Sift in the flour, cocoa powder, and baking powder.

- Cut the dry ingredients into the wet ingredients.

- Mix in the chocolate chips.

- Cover and place in the fridge for 20 minutes.

- Line a large cookie sheet with parchment paper.

- Pre-heat the oven to 325 degrees F.

- Measure a tbsp of cookie dough. I like to use a cookie dough scoop.

- Roll the dough into a ball and place on the cookie sheet. Continue until half the dough is rolled into dough balls.

- Bake for 14-16 minutes.

- Let the cookies cool on a wire rack.

- Whisk together the milk, cocoa powder, and 4 tbsp icing sugar until smooth.

- Whisk in 1-2 tbsp of icing sugar, depending on how thin or thick you’d like the icing.

- Place the icing in a small ziplock bag and cut one corner.

- Drizzle the icing on top of the cookies.
