With Summer halfway through, I’m trying to get in a few more salad recipes, and I thought a tortellini salad would be a nice addition. Made with a homemade lime and honey vinaigrette dressing, this tasty salad is a must try this Summer, especially if you’re hosting a BBQ. Enjoy!
Ingredients
1 (350 g) package cheese tortellini
1/2 cup canola oil
Juice from three medium ripe limes
1 tbsp white balsamic vinegar
1 tbsp honey
2 garlic cloves -finely grated
Pinch of red pepper flakes
Salt and black pepper to taste
1 (200 g) container pearl bocconcini cheese
3 scallions -thinly sliced
1 (200 ml) can sliced black olives
1 (255 g) container grape tomatoes -cut in half
Roughly chopped fresh parsley
Directions
- Bring a pot of water to a boil and add in the tortellini.
- When the tortellini are cooked, drain the water, and put them in a large bowl. Toss with some canola oil so they don’t stick together. Cool completely.
- Whisk together the oil, lime juice, white balsamic vinegar, honey, garlic, red pepper flakes, salt, and black pepper.
- Drain the bocconcini and rinse with cold water. Drain well and press between paper towels to soak up the excess liquid.
- Add all the ingredients together and mix well.
- Cover and place in the fridge until ready to serve.
