Spinach and Goat Cheese Black Bean Burger

This veggie packed black bean burger is so delicious and it’s a great way to add protein into your diet. Enjoy!


Ingredients make 7 burgers 1 (540 ml) can black beans -drain the liquid and rinse 1/2 tbsp extra virgin olive oil 2 garlic cloves -finely grated 1 small red onion -diced 1/2 cup diced peppers of choice Salt and black pepper to taste 1/4 cup water 1 (142 g) container baby spinach 1 large egg -beaten 1/4 cup BBQ sauce 1/2 cup bread crumbs 1/2 tsp chili powder 1/2 tsp cumin Salt and black pepper to taste 1/2 cup goat cheese

Directions - Pre-heat the oven to 300 degrees F. - Line a large cookie sheet with parchment paper and spread out the black beans in a single layer. - Bake for 20 minutes. - Remove from the oven and cool completely. - As the beans bake, make the veggies using the following method: - Put the oil in a pan and heat on medium. - When the oil is heated, add the garlic, onion, peppers, salt, and black pepper. Mix well. - Reduce the heat a little. - When the veggies are tender, remove from the heat, and cool. - As the peppers cook, make the spinach using the following method: - Put a 1/4 cup of water and the spinach in a pan and heat on medium. - Mix often as the spinach wilts. Reduce the heat a little if needed. Don't overcook the spinach. - Remove from heat and drain the access liquid. Cool completely. - Put the spinach in a towel and squeeze out the access liquid. Roughly chop. - When the beans are cooled, put them in a food processor, and pulse a few times. - Put the beans in a bowl and add in the egg, BBQ sauce, and bread crumbs. Mix well. - Add in the veggies and the remaining ingredients (except for the goat cheese). Mix well. - Add in the goat cheese and mix. - Line a large cookie sheet with parchment paper. - Pre-heat the oven to 350 degrees F. - Measure a 1/2 cup of the mixture and tightly press together forming a ball. - Place on the parchment paper and continue with the remaining mixture. - Flatten each one with a spatula. - Bake for 16-18 minutes.
