Peanut Butter Chocolate Chip Cookies

Two of my weaknesses are peanut butter and chocolate, so these little gems are my perfect treat, and they’re so easy to make. These soft baked cookies are made by whipping together the ingredients using an electric mixer until soft and smooth, making these cookies so light when baked. Enjoy!



Ingredients

3/4 cup smooth peanut butter

1/3 cup brown sugar

1 large egg

1 tsp vanilla

1/2 cup flour

2 tsp baking powder

1/3 cup mini chocolate chips


 

Chunky vs. smooth peanut butter

You can always use chunky peanut butter instead of smooth, so you get a nice peanut crunch. I always use what I have in the pantry, and when I do use smooth peanut butter, sometimes I'll add in chopped pecans or walnuts to get that nice crunch.



Directions

- Line a cookie sheet with parchment paper.

- Pre-heat the oven to 325 degrees F.

- Cream together the peanut butter and the sugar using an electric mixer on low speed.

- Add in the egg and vanilla. Mix together on low speed.

- Put the flour and the baking powder into a sifter.

- Sift the dry ingredients on top of the wet ingredients.

- Mix everything together using an electric mixer on medium-low speed.

- Mix in the chocolate chips using a spatula.

- Using a cookie dough scoop, scoop the dough, and place it on the parchment paper. Scoop half the dough.

- Bake for 12-13 minutes.

- Place the cookies on a wire rack to cool.

- Continue with the remaining cookie dough.


 

Additional add-ins

Aside from nuts, feel free to add in other ingredients you may have in your pantry, such as dried cranberries or raisins, butterscotch or white chocolate chips, and/ or finely grated coconut.
