As soon as I see the corn stands pop up, I instantly start to think about new recipes I can make with corn on the cob. One idea that came to my mind was fresh corn salsa, and I wasn’t sure if I wanted to make a cooked salsa or a raw one, and in the end I chose raw.
Homemade salsa is one of the best things to snack on because it’s loaded with fresh veggies and no preservatives are added in. Also, I find raw salsa to be so refreshing, making it perfect for summer. Enjoy!
Ingredients
2 corn on the cobs -cooked and cut off the kernels
1 large red bell pepper -diced
1 (255 g) container grape tomatoes -diced
1 medium red onion -diced
2-3 garlic cloves -finely grated
Canola oil -enough to drizzle some in the salsa
Juice from 1 large lemon
Juice from 2 medium ripe limes
1 tsp Dijon mustard
Freshly chopped parsley
Salt and black pepper to taste
Directions
- Put all the ingredients into a bowl and mix well.
- Cover and place in the fridge until ready to serve.
- Enjoy with your favourite tortillas chips
