Edamame Dip

This tangy edamame dip is perfect for entertaining and it's so easy to make. Whip up this tasty dip the next time you're invited to a gathering, or when you're looking for a healthy snack to enjoy.



Ingredients

2 cups frozen edamame beans

2 tbsp canola oil

Juice from one medium lemon

Juice from one medium lime

2 garlic cloves

4 scallions (white and light-green part)

1/2 cup roughly chopped parsley

Salt and black pepper to taste

Pinch of red pepper flakes



Directions

- Put the edamame beans and water in a small pot and bring to a boil.

- Reduce the heat a little and cook the beans for 7 minutes.

- Set aside a 1/4 cup of the bean water.

- Drain the water and rinse the beans with cold water. Drain well and cool completely.

- Put the beans in a food processor and process until the beans are roughly chopped.

- Add in the oil, lemon juice, and lime juice.

- Puree a little.

- Add in the garlic, scallions, parsley, salt, black pepper, red pepper flakes, and 1 tbsp of the bean water. Puree.

- Gradually add in the remaining water and purée till smooth.

- Serve with crackers, baguette, naan bread, and/or pita.
