Curry Rice Noodles

These days, I’m on a curry kick, and I’ve fallen in love with this curry noodle dish. I've seasoned the noodles with curry, cumin, garlic powder, soy sauce, and hoisin sauce, making this dish full of flavour. I also used a variety of fresh veggies, which includes snow peas and kernels right from the cob. Enjoy!



Ingredients

1 large egg

Salt and black pepper to taste.

1/2 tbsp extra virgin olive oil

1 garlic clove -finely grated

1 medium red bell pepper - cut into strips

Large handful of snow peas

2 corn on the cobs -cooked and cut off the kernels

Salt and black pepper to taste

2 cups water or vegetable broth

2-3 tsp curry powder

2 tsp cumin

1 tsp garlic powder

2 tbsp soy sauce

2 tbsp hoisin sauce

Salt and black pepper to taste

1 (454 g) package of flat rice noodles



Directions

- Put some butter in a pan and heat on medium.

- Beat the egg with some salt and black pepper and pour into the pan when the butter is melted.

- Let the egg cook. Don’t scramble.

- When the egg is cooked, flip it, and cut it into pieces using a spatula. Remove from heat.

- Heat a pot of water for the noodles.

- As the water heats up, cook the veggies.

- Put the extra virgin olive oil in a medium sized pan and add in the garlic. Heat on medium.

- Add in the pepper and snow peas. Mix often and reduce the heat a little if needed. Cook for a few minutes.

- Add in the corn, salt, and black pepper. Mix well.

- Cook for a few minutes then put the veggies on a plate. Set aside.

- Pour the water or vegetable broth into the same pan and add in the curry powder, cumin, garlic powder, soy sauce, hoisin sauce, salt, and black pepper.

- Heat on medium and bring to a soft boil. Mix well to combine the ingredients.

- At this point, the water for the noodles be should be boiling. Add in the noodles and stir often. Cook for 2 minutes.

- Drain the water and rinse with cold water. Drain well.

- Add the noodles to the heated water and using two large forks, toss the noodles. As the noodles cook, they will soak up the liquid. Mix often.

- I like to cut the noodles a few times because they’re so long.

- When the liquid is almost absorbed, add in the veggies, and continue to toss till the liquid is absorbed.

- Add in the egg and toss.
