One of my favourite grains to use when I’m making a grain salad is couscous. This light and fluffy grain works well with any veggie, and it pairs so nicely with feta cheese and a vinaigrette dressing. I also love to add certain nuts to my couscous salad, such as pine nuts, walnuts, and pecans.
I’ve made this couscous salad with shredded carrot, sliced radishes, fresh parsley, and feta cheese, and of course, some pine nuts. I kept the vinaigrette dressing simple by using oil, lime juice, garlic, honey, and sesame oil. Enjoy!
Ingredients
2 1/2 cups water
Salt
2 cups uncooked couscous
1/3 cup canola oil
Juice from 3 large limes
1 garlic clove -finely grated
1/2 tbsp honey
1/2 tsp sesame seed oil
Salt and black pepper to taste
1 medium carrot -shredded
1/2 cup thinly sliced radishes
1 small red onion -diced
1/2 cup finely chopped parsley
1/2 cup crumbled feta cheese
1/3 cup pine nuts
Directions
- Put the water in a pot and bring to a boil.
- Add in the salt and the couscous. Stir well.
- Cover and remove from heat.
- Let stand for 8 minutes.
- Fluff with a fork and place in a bowl. Cool completely.
- Whisk together the oil, lime juice, garlic, honey, sesame seed oil, salt, and black pepper. Set aside.
- Add the carrot, radishes, red onion, and parsley to the couscous. Mix well.
- Add in the dressing and mix well.
- Add in the feta cheese and pine nuts. Mix well.
- Cover and place in the fridge until ready to serve.
