Cookies and Cream

INGREDIENTS Makes 6-8 small bowls or glasses

3 cups 35% whipping cream

5 tbsp icing sugar

1 box of chocolate wafer cookies

Fresh berries of choice


DIRECTIONS

- Place the mixing bowl and the whisk that will be used to whip the whipping cream in the freezer for 20 minutes.

- Mix together the whipping cream and the icing sugar using an electric mixer on high speed until soft peeks form.

- Pipe some whipped cream on the bottom of a small bowl or glass.

- Place some chocolate wafer cookies on top of the whipped cream and gently press down.

- Continue to layer the whipped cream and the cookies until the bowl or glass is full.

- Repeat with the other bowls or glasses.

- Tightly cover each bowl or glass with saran wrap and place them in the fridge over night so the cookies soften.

- Top with fresh berries just before serving.
