Cooked Salsa

Homemade salsa is one of the best things to make during the Summer months, especially if you grow your own tomatoes and peppers. This small batch salsa is perfect for entertaining, and of course, it makes the perfect snack for movie night. Enjoy!



Ingredients

1/2 tbsp extra virgin olive oil

2 large garlic cloves -finely grated

1 medium red onion -diced

1 (255 g) container grape tomatoes -diced

1 medium red bell pepper -diced

1 medium jalapeño -diced

1 (156 ml) can tomato paste

1/4 cup water

Juice from half a large lemon

Salt and black pepper to taste

1/3 cup freshly chopped parsley


Directions

- Put the oil in a pan and add in the garlic and the onion. Heat on medium and cook for a few minutes. Mix often.

- Add in the remaining ingredients (except for the parsley) and mix well.

- Bring to a soft boil then reduce the heat to maintain a soft boil. Mix often.

- Cook for 20-25, depending on how thin or thick you’d like the salsa.

- When the salsa is almost done, mix in the parsley.

- Remove from heat and cool.

- Cover and place in the fridge until ready to serve.
