Cinnamon Walnut Cookies

These soft-baked cookies are perfect for Christmas baking, and I make them every year. Cinnamon and walnuts are my favourite things to bake with during the holiday season, and these cookies are at the top of my list for must haves in my Christmas cookie box. Enjoy!



Ingredients make 20 cookies

1/3 cup sugar

1 tsp cinnamon

1/2 cup unsalted butter -very soft

1/3 cup brown sugar

1/3 cup white sugar

1 large egg

1 tsp vanilla

1 cup flour

2 tsp baking powder

1 tsp cinnamon

1/2 cup roughly chopped walnuts


 

Choose a different nut

You can always use a different kind of nut if you don't have walnuts in your pantry, or if there's a different nut you prefer. Nuts are very versatile, so they can easily be changed to accommodate your needs and taste. Some of the other nuts I would suggest are pecans, almonds, and hazelnuts.



Mix well

Make sure you mix the ingredients well. With each step, ensure that you take the time to mix the ingredients together until well combined. This will result in a soft cookie dough that will spread out nicely when baking.


 

Directions

- Mix together the sugar and the cinnamon. Set aside.

- Cream the butter using an electric mixer on medium-low speed.

- Add in the sugars and cream together on medium-low speed.

- Add in the egg and the vanilla. Mix together on low speed.

- Put the flour, the baking powder, and the cinnamon into a sifter.

- Gradually sift and mix the dry ingredients into the wet ingredients on medium-low speed. --- Increase the speed to medium to fully combine all the ingredients.

- Fold in the walnuts with a spatula.

- Line a large cookie sheet with parchment paper.

- Pre-heat the oven to 325 degrees F.

- Scoop the dough with a cookie dough scoop and roll the dough in the sugar and cinnamon.

- Place on the parchment paper and continue until half of the dough has been scooped.

- Bake for 13-14 minutes.

- Place the cookies on a wire rack to cool.

- Continue with the remaining cookie dough.
