Cinnamon Walnut Cookies

These soft baked cookies are perfect for Christmas baking and they’re a cinch to make. Make a batch, or two, of these delightful cookies this holiday season, and enjoy them with your family and friends over a cup of coffee.



Ingredients make 24 cookies

1/2 cup unsalted butter -soft

1/3 cup sugar

1 large egg

1 tsp vanilla

1 1/4 cups flour

2 tsp baking powder

1/2 cup chopped walnuts

1/4 cup sugar

1/2 tbsp cinnamon



Directions

- Cream the butter using an electric mixer on medium-low speed.

- Add in the sugar and cream together the butter and sugar on medium-low speed.

- Add in the egg and vanilla. Mix together the ingredients on low speed.

- Put the flour and the baking powder into a sifter.

- Gradually sift and cut the dry ingredients into the wet ingredients. Knead the dough to incorporate all the ingredients. Don’t over work the dough.

- When the ingredients are almost combined, add in the walnuts, and knead the dough to incorporate the walnuts.

- Line a large cookie sheet with parchment paper.

- Pre-heat the oven to 325 degrees F.

- Using a tbsp measuring spoon, measure a tbsp of cookie dough, and roll it into a ball. I like to use a cookie scoop.

- Place on the parchment paper and continue until half the dough is rolled into dough balls.

- Mix together the sugar and the cinnamon.

- One by one, roll the dough balls in the sugar and cinnamon mixture, and place on the cookie sheet.

- Bake for 14-16 minutes.

- Place the cookies on a wire rack to cool.

- Continue with the remaining cookie dough.
