These Italian cookies are made with minimal ingredients and they’re a cinch to make. They’re made with ground almonds, making them gluten free, cocoa powder, egg whites, sugar, and vanilla. So simple, and so delicious!

Ingredients
2 cups ground almonds (almond flour)
3/4 cup sugar
1/3 cup cocoa powder -sifted
3 large egg whites
1/2 tsp vanilla
Extra sugar for rolling
Directions
- Mix together the ground almonds, sugar, and cocoa powder. Set aside.
- Beat the egg whites using an electric mixer on high speed until soft peaks form.
- Add in the vanilla and beat for a little longer.
- Fold the egg whites into the dry ingredients.
- Place in the fridge for 30 minutes.
- Line a large cookie sheet with parchment paper or with a baking mat.
- Put some sugar in a small bowl.
- Pre-heat the oven to 300 degrees F.
- Using a tbsp cookie scoop, scoop the cookie dough, and release the dough on top of the sugar.
- Roll the dough in the sugar and place on the cookie sheet.
- Continue with half the dough.
- Place the remaining dough in the fridge.
- Bake for 13-15 minutes then turn the cookie sheet and bake for an additional 13-15 minutes.
- Let the cookies cool on a wire rack.
- Continue with the remaining cookie dough.
