These baked chickpea burgers are full of flavour, and they're made with pan-fried onions and peppers, feta cheese, sundried tomatoes, and seasoning. Make a batch of these veggie burgers the next time you’re in the mood for a veggie patty, and enjoy one, or two, with your favourite bun and toppings.
Ingredients make 7 patties
1 (540 ml) can chickpeas -drain the liquid and rinse
1/2 tbsp extra virgin olive oil
1 large garlic clove -finely grated
1 small red onion -diced
1 small red bell pepper -diced
1 large egg -beaten
1/4 cup BBQ sauce
1/2 cup breadcrumbs
1/2 cup crumbled feta
1/2 cup chopped sundried tomatoes
1/2 cup finely chopped fresh parsley
1 tsp cumin
1/2 tsp paprika
Salt and pepper to taste

Directions
- Pre-heat the oven to 300 degrees F.
- Line a cookie sheet with parchment paper.
- Spread out the chickpeas in a single layer.
- Bake for 20 minutes.
- Remove the chickpeas from the oven and cool completely.
- As the chickpeas cool, make the veggies.
- Put the extra virgin olive oil in a pan and add in the garlic and onion. Heat on medium and cook for a few minutes. Mix often.
- Add the peppers and mix well.
- Cook until the peppers are tender. Reduce the heat a little if needed.
- Remove from heat when ready and cool.
- Put the chickpeas in a food processor and pulse until roughly chopped.
- Put the chickpeas in a bowl and add in the egg, BBQ sauce, and breadcrumbs. Mix well.
- Press a chunk of feta between paper towels.
- Add in the veggies, feta, sundried tomatoes, parsley, cumin, paprika, salt, and pepper. Mix well.
- Line a cookie sheet with parchment paper.
- Pre-heat the oven to 350 degrees F.
- Measure a 1/2 cup of the mixture and tightly press together to form a ball.
- Place on the parchment paper.
- When all the chickpea balls are formed, carefully flatten with a spatula.
- Bake for 16-18 minutes.
