Chickpea and Sweet Potato Burger

This oven baked burger is perfect for vegetarians or for someone who’s looking for a plant-based patty. I’ve made numerous veggie burgers over the years, and this is the simplest burger I’ve made to date. The chickpeas and sweet potato are baked in the oven first and cleanup is a cinch. Enjoy!



Ingredients make 6 patties

1 (540 ml) can chickpeas -drain the liquid and rinse

1 small sweet potato

1 large egg -beaten

1/4 cup BBQ sauce

1 tsp garlic powder

1 tsp onion powder

1 tsp cumin

1/2 tsp paprika

Salt and pepper to taste

3/4 cup breadcrumbs

Directions

- Pre-heat the oven to 300 degrees F.

- Line a cookie sheet with parchment paper.

- Spread out the chickpeas in a single layer.

- Bake for 20 minutes.

- Remove the chickpeas from the oven and cool completely.

- Line a cookie sheet with tin foil.

- Pre- heat the oven to 400 degrees F.

- Poke the sweet potato numerous times with a fork.

- Place the sweet potato on the tin foil and bake for 50 minutes or until you can easily pierce it with a fork. Turn the sweet potato a few times as it bakes.

- Remove from the oven and slice in half. Cool completely.

- Peel off the skin and mash.

- Put the chickpeas in a food processor and pulse until roughly chopped.

- Put the chickpeas in a bowl and add in the sweet potato, egg, and BBQ sauce. Mix well.

- Add in the garlic powder, onion powder, cumin, paprika, salt, and pepper. Mix well.

- Add in the breadcrumbs and mix well.

- Line a cookie sheet with parchment paper.

- Pre-heat the oven to 350 degrees F.

- Measure a 1/2 cup of the mixture and tightly press together to form a ball.

- Place on the parchment paper.

- When all the chickpea balls are formed, carefully flatten with a spatula.

- Bake for 16-18 minutes.
