These cauliflower tacos are a must try if you’re looking for a vegetarian style taco, and they’re perfect for a weekend meal. I’ve loaded these tacos with seasoned baked cauliflower, creamy coleslaw, grape tomatoes, and shredded cheddar cheese. Enjoy!
Ingredients
1 medium head of cauliflower -cut into small pieces
Extra virgin olive oil to coat
1 tsp paprika
1/2 tsp cumin
1 tsp garlic powder
1/2 tsp onion powder
Salt and black pepper to taste
1 bag of plain coleslaw
Mayonnaise
Dijon mustard
Sesame seed oil
Salt and black pepper to taste
Grape tomatoes -cut in half
Shredded old cheddar cheese
Lime -cut into wedges
Taco shells
Note: I admit that tacos can be very messy to eat, but the crunch of the shell always makes it worth it. But if you're looking for a less messy meal, instead of using taco shells, use tortilla wraps, which are equally delicious.
Directions
- Pre-heat the oven to 375 degrees F.
- Line a large cookie sheet with parchment paper.
- Mix together the cauliflower, oil, paprika, cumin, garlic powder, onion powder, salt, and black pepper. Mix well.
- Put the cauliflower on the cookie sheet in a single layer.
- Bake for 20 minutes. Mix often.
- As the cauliflower bakes, make the coleslaw.
- Mix together the plain coleslaw, some mayonnaise, Dijon mustard, a small amount of sesame seed oil, salt, and black pepper.
- Cover and place in the fridge.
- When the cauliflower is done, build your taco.
- Squeeze some lime juice on top of your taco as well.
Cauliflower is one of my favourite veggies to roast in the oven. The texture and taste of roasted cauliflower is so delicious, in my opinion, and you can add just about any spice, seasoning, or sauce to cauliflower and it'll turn out great.
