Burrito Bowl

I’ve been wanting to make a burrito bowl for some time now, and I’m so happy I finally did. It’s simple to make and put together, and it’s so healthy. This bowl is loaded with rice, black beans that are cooked with a variety of seasoning, numerous veggies, and a spoonful of sour cream. Serve with your favourite tortilla chips and enjoy!



Ingredients

1 cup uncooked Jasmine rice

1/2 tbsp extra virgin olive oil

1 garlic clove -finely grated

1 (540 ml) can black beans -drain the liquid and rinse

Juice from half a large lemon

1/2 tsp paprika

1/2 tsp cumin

1 tsp chili powder

Salt and black pepper to taste

Grape tomatoes -cut into quarters

2 corn on the cobs -cooked and cut off the kernels

Roughly chopped fresh parsley

Avocado -peeled and cut into strips

Sour cream

Lime wedges

Tortilla chips



Directions

- Cook the rice as per the directions.

- As the rice cooks, prepare the black beans.

- Put the oil in a pan and add in the garlic. Heat on medium for a few minutes.

- Add in the black beans, lemon juice, paprika, cumin, chili powder, salt, and black pepper. Mix well.

- Reduce the heat to medium-low and cook until the beans are heated and the seasoning is well combined. Mix often.

- When the rice and beans are done, make the burrito bowl.

- When the rice, beans, tomatoes, corn, parsley, and avocado is added to the bowl, top with a scoop of sour cream and some lime wedges.

- Serve with your favourite tortilla chips.
