Ingredients
1 (680g) container coloured cherry tomatoes -cut into quarters
1 small red onion -diced
1-2 garlic cloves -finely grated
Finely chopped fresh parsley
Extra virgin olive oil
White balsamic vinegar
Salt and black pepper to taste
Ciabatta or baguette
Salted butter -very soft

Directions
- Mix together the tomatoes, red onion, garlic, and parsley. Add in the oil, balsamic vinegar, salt, and black pepper to taste. Set aside.
- Line a large cookie sheet with tin foil.
- Pre-heat the oven to 350 degrees F.
- Slice the ciabatta or baguette and spread on a thin layer of butter onto each slice.
- Place each slice on the cookie sheet and bake until the butter begins to sizzle, then broil until the edges are toasted.
- Remove the bread from the oven and top with the tomato mixture.
- Serve immediately.
