Brownie Cupcakes for Easter

Easter is one of my favorite times to bake, especially when mini chocolate Easter eggs are involved. Enjoy!


Ingredients make 10 cupcakes

2/3 cup canola oil

1 cup sugar

4 large eggs

2 tsp vanilla

1/2 cup cocoa powder

2/3 cup flour

1 tsp baking powder

1/4 cup mini chocolate chips

1/3 cup unsalted butter -very soft

1 3/4 - 2 cups icing sugar

3 - 3 1/2 tbsp milk

Yellow food colouring

Blue food colouring

Mini Chocolate Easter eggs


Directions

- Line two muffin tins with paper liners.

- Whisk together the canola oil and the sugar.

- Whisk in the eggs and the vanilla.

- In a separate bowl, sift together the cocoa powder, flour, and the baking powder.

- Gradually whisk the dry ingredients into the wet ingredients.

- Fold in the chocolate chips.

- Pre-heat the oven to 350 degrees F.

- Equally fill 10 paper liners.

- Bake for 20 -22 minutes.

- Remove the cupcakes from the tins and let them cool on a wire rack.

- Using an electric mixer on medium speed, cream the butter.

- Gradually add in the icing sugar and milk. Increase the speed if needed.

- Add in a few drops of food colouring to make green icing.

- Pipe some icing on each cupcake and top with some Easter eggs.
