This light loaf is made with wild blueberries and it’s so versatile. Whether you enjoy a slice for breakfast, dessert, or as an evening snack with a cup of tea, this scrumptious loaf is perfect for any time of the day. Enjoy!
Ingredients
2 large eggs -room temperature
1/2 cup sugar
1/4 cup canola oil
2 tsp vanilla
1/2 cup 3.25% milk -room temperature
2 tbsp lukewarm water
1 1/2 cups flour
2 tsp baking powder
1 1/2 tsp cinnamon
3/4 cup frozen wild blueberries
1/3 cup roughly chopped pecans
1 tbsp milk
7-9 tbsp icing sugar
Directions
- Line a loaf pan with parchment paper, leaving a few inches of parchment paper to hang over all four edges.
- Pre-heat the oven to 350 degrees F.
- Whisk together the eggs and the sugar.
- Whisk in the oil and the vanilla.
- Whisk in the milk and the water.
- Put the flour, baking powder, and cinnamon into a sifter and gradually whisk the dry ingredients into the wet ingredients. Don’t over mix.
- Fold in the blueberries and pecans. Don’t over mix.
- Pour the batter into the pan.
- Top with some finely chopped pecans.
- Bake for 35-40 minutes or until you can pierce the middle of the loaf with a toothpick and it comes out clean.
- Lift out the loaf from the pan and place it on a wire rack. Remove the parchment paper.
- Cool completely.
- When the loaf is cooled, whisk together the milk and the icing sugar until smooth.
- Drizzle the icing on top of the loaf.
Drizzled icing
A thin layer of drizzled icing is a great addition to any loaf, and I love the hint of sweetness. I definitely prefer drizzled icing over buttercream icing for these reasons:
Less ingredients are needed to make drizzled icing than buttercream icing. To make buttercream icing you'll need unsalted butter, lots of icing sugar, milk, and vanilla.
Drizzled icing is simpler to make than buttercream icing. Drizzled icing is made by whisking together some milk and icing sugar, and that's it. Buttercream icing involves the use of an electric mixture and I find it's messy to make.
Drizzled icing is a thin layer of icing vs. buttercream icing is usually spread on in a thick layer.
