These soft meatballs are the perfect addition to a homemade tomato sauce and they’re packed with protein and veggies. Enjoy!
Ingredients make 8 meatballs
1 (540 ml) can black beans -drain the liquid and rinse
1/2 tbsp extra virgin olive oil
1 large garlic clove -finely grated
1 small red onion -diced
1 small red bell pepper -diced
Salt and black pepper to taste
1 large egg -beaten
1/4 cup BBQ sauce
1/2 cup bread crumbs
1/2 cup finely chopped fresh parsley
1 tsp chili powder
1 tsp cumin
Salt and black pepper to taste
Directions
- Pre-heat the oven to 300 degrees F.
- Line a large cookie sheet with parchment paper and spread out the black beans in a single layer.
- Bake for 20 minutes.
- Remove from the oven and cool completely.
- As the beans bake, make the veggies using the following method:
- Put the oil in a pan and add in the garlic and onion. Heat on medium. Cook for a few minutes and mix often.
- Add in the pepper, salt, and black pepper. Mix well.
- Cook until any liquid is cooked away.
- Remove from the heat and cool.
- When the beans are cooled, put them in a food processor, and pulse to roughly chop the beans.
- Put the beans in a bowl and add in the egg, BBQ sauce, and bread crumbs. Mix well.
- Add in the veggies and the remaining ingredients. Mix well.
- Line a large cookie sheet with parchment paper.
- Pre-heat the oven to 350 degrees F.
- Measure a 1/3 cup of the mixture and tightly press together forming a ball.
- Place on the parchment paper and continue with the remaining mixture.
- Bake for 16-18 minutes.
- As the meatballs bake, start your tomato sauce.
- When the meatballs are done, place them in your tomato sauce.
- When mixing the sauce, careful not to break the meatballs.
