This baked black bean burger makes the perfect meal, and whether it's Winter or Summer, enjoy this tasty burger with your favorite toppings and side dishes. This protein packed veggie burger is made with baked black beans, red onion, peppers, and seasoning. Truly a must try!
Ingredients make 6 burgers
1 (540 ml) can black beans -drain the liquid and rinse
1/2 tbsp extra virgin olive oil
2 garlic cloves -finely grated
1 small red onion -diced
1 small red bell pepper -diced
Salt and black pepper to taste
1 large egg -beaten
1/4 cup BBQ sauce
1/2 cup bread crumbs
1/2 tsp chili powder
1/2 tsp cumin
Salt and black pepper to taste
Directions
- Pre-heat the oven to 300 degrees F.
- Line a large cookie sheet with parchment paper and spread out the black beans in a single layer.
- Bake for 20 minutes.
- Remove from the oven and cool completely.
- As the beans bake, make the veggies using the following method:
- Put the oil in a pan and add in the garlic and onion. Heat on medium and mix often. Cook for a few minutes.
- Add in the red bell pepper, salt, and black pepper. Mix often.
- Reduce the heat a little if needed.
- When the veggies are tender, remove from the heat, and cool.
- When the beans are cooled, put them in a food processor, and pulse until they’re roughly chopped.
- Put the beans in a bowl and add in the egg, BBQ sauce, and bread crumbs. Mix well.
- Add in the veggies and the remaining ingredients. Mix well.
- Line a large cookie sheet with parchment paper.
- Pre-heat the oven to 350 degrees F.
- Measure a 1/2 cup of the mixture and tightly press together to form a ball.
- Place on the parchment paper and continue with the remaining mixture.
- Flatten each one with a spatula.
- Bake for 16-18 minutes.
