Apple Cobbler

Apple cobbler is one of the best comfort foods, especially during the cooler months. I usually enjoy this dish with vanilla ice cream but this time I added a scoop of homemade whipped cream, and it’s a game changer!!



Ingredients

5 Granny Smith apples

1/3 cup brown sugar

2 tbsp unsalted butter

1/2 tbsp cinnamon

2 1/4 cups flour

3 tsp baking powder

1/4 cup sugar

1/2 cup unsalted butter -soft

1/2 cup 3.25% milk -room temperature

1 large egg -room temperature

1 tsp vanilla



Directions

- Peel the apples and slice.

- Put the apples, brown sugar, butter, and cinnamon into a medium size pan.

- Heat on medium and mix often.

- Cook until the apples begin to soften. Reduce the heat a little if needed. Put everything into an ovenproof dish when the apples are ready.

- As the apples cook, make the dough.

- Mix together the flour, baking powder, and sugar.

- Cut in the butter.

- In a separate bowl, whisk together the milk, egg, and vanilla.

- Mix the wet ingredients into the dry ingredients using a fork or spoon, then knead to incorporate the ingredients. Don't overwork the dough.

- When the ingredients are almost combined, form a ball.

- Pre-heat the oven to 350 degrees F.

- Flour a hard surface and place the dough on top. Flour the top of the dough as well.

- Using a rolling pin, roll the dough till it's a little thinner than 1/2 inch thick.

- Carefully place the dough over the apples and cut off the access dough around the edge of the dish.

- Cut slits in the dough.

- Bake for 25-30 minutes.

- Serve warm with vanilla ice cream or homemade whipped cream.
