Apple Carrot Loaf

This scrumptious loaf will pair perfectly with your morning coffee or with a cup of tea at the end of a long day. If you’re looking to spend some time baking this weekend, then this apple carrot loaf is a must try. Enjoy!



Ingredients

1 large apple

2 tbsp brown sugar

1/2 tbsp unsalted butter

2 tsp cinnamon

1/4 cup finely chopped walnuts

2 tbsp brown sugar

2 large eggs -room temperature

1/3 cup sugar

1/4 cup canola oil

2 tsp vanilla

1/2 cup 35% whipping cream -room temperature

1 1/2 cups flour

2 tsp baking powder

1 tsp cinnamon

1 cup shredded carrot


 

Topping

For this loaf, I've mixed finely chopped walnuts and brown sugar for the topping, but you can also use granola or homemade crumble. Either one of these toppings works well with this loaf, it just depends on your personal preference.



Directions

- Peel the apple and dice into small pieces.

- Put the apple, brown sugar, butter, and cinnamon into a pot.

- Heat on medium and mix often.

- When the mixture begins to bubble, reduce the heat a little. Cook until the apple begin to soften.

- Remove from heat and cool.

- Mix together the walnuts and brown sugar. Set aside.

- Line a loaf pan with parchment paper, leaving a few inches of parchment paper to hang over all four edges.

- Pre-heat the oven to 350 degrees F.

- Whisk together the eggs and the sugar.

- Whisk in the oil and the vanilla.

- Whisk in the whipping cream.

- Put the flour, baking powder, and cinnamon into a sifter. Gradually whisk the dry ingredients into the wet ingredients. Don’t over mix.

- Fold in the apple and carrot. Don’t over mix.

- Pour the batter into the pan.

- Top with the walnuts and brown sugar.

- Bake for 40-45 minutes or until you can pierce the middle of the loaf with a toothpick and it comes out clean.

- Lift out the loaf from the pan and place it on a wire rack. Remove the parchment paper.

- Cool completely.
